We’ve really been enjoying the non-humid summer weather we’ve had this week! That means we have spent tons of time outdoors, walking, and playing at the park. Gotta soak up this cooler weather while it lasts.
Even with the cool weather, I still didn’t want to turn on the oven when my sweet tooth struck this week. I whipped up this super easy, yet yummy “No-Bake Peanut Butter Cups”. They are so good, and i’d take these over a Reese’s Cup any day:)
No-Bake Peanut Butter Cups
1/2 bag milk chocolate chips
1/2 cup creamy peanut butter
1/2 cup confectioners sugar
1/2 cup graham cracker crumbs
Melt your chocolate chips in the microwave (about 1 minute 15 seconds) stirring half way through. When they are ready you should have a smooth consistency, no chunks.
Mix the peanut butter, confectioners sugar, and graham cracker crumbs in a separate bowl. The consistency should be a formed dough that you can easily handle and make into small balls.
Line your cupcake pan with liners, and spoon chocolate into each liner. You’ll then want to use a toothpick or spoon to gently spread the chocolate around the bottom of the liners, pulling the chocolate onto the sides ever so slightly.
Let the chocolate harden (I pop the pan into the freezer to speed up this step). Once the chocolate is hard you can start adding your peanut butter filling. I like to form small mounds of peanut butter, and gently press them into the center of the cupcake liners, making sure to leave a little room on the sides so the chocolate can cover them completely. You want to make sure the chocolate can touch the hardened chocolate that’s already at the bottom of your liners.
After you’ve scooped your peanut butter, spoon more of your melted chocolate on top, so that it covers everything nicely, and meets up with the chocolate at the bottom of each liner. Let everything harden again, or use the freezer trick to speed things along. Once you’ve got a solid shell, it’s time to unwrap and munch. Just be sure not to bite too hard into that frozen P.B. Cup!
